Description

I love to make this for my family on Saturday mornings. This recipe tastes a lot like peach cobbler, just not quite as sweet and rich. It’s also great heated over and makes enough that you can heat some up the next morning.

Ingredients

  • ¼ cups Melted Butter, Plus 1 Tablespoon To Grease The Pan
  • 2  Eggs
  • ½ cups Unsweetened Applesauce
  • ¼ cups Maple Syrup
  • 1 teaspoon Vanilla
  • ½ cups Milk
  • 2 cups Oatmeal
  • ¼ cups Brown Sugar
  • 2 Tablespoons Wheat Germ
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 2 cans (14.5 Oz. Size) Sliced Peaches In Syrup, Drained

Preparation

Preheat oven to 350ºF. Brush a 9-inch by 9-inch baking pan with 1 tablespoon of the melted butter. In a large mixing bowl, beat eggs and other wet ingredients (including remaining 1/4 cup melted butter) and until well mixed. Add dry ingredients and mix well. Pour half the mixture into the buttered pan. Arrange peach slices over oatmeal and top with remaining oatmeal. Bake uncovered for 35 minutes or until lightly browned.

I really liked this baked oatmeal. The peaches are a perfect addition and it’s delicious. Sweetening it mostly with applesauce is guilt-free. I only added half of the brown sugar and left out the maple syrup (only because I didn’t have any) and it still tasted great! Perfect Saturday morning breakfast and even my VERY picky one-yr-old loved it=) Also, easily made dairy-free… just use coconut oil in place of butter and coconut milk in place of regular.

We loved this baked oatmeal! I have tried a few recipes and this one is my favortie! My one year old loved it too! I made it dairy-free (with vegan butter and almond milk) and it turned out great! Have you ever made it with sliced apples? I would like to try it, but I’m not sure if the apples would cook through. Thank you for this great and healthy recipe!
