A healthy breakfast option: cardamom baked donuts! They are grain-free as well!
In a bowl place coconut flour, baking soda, baking powder, and cardamom and whisk together. Set aside.
Next grab your sugar (or sugar of choice), oil and eggs and whisk together in a mixing bowl. Once that is all mixed together, add in your dry ingredients. Begin to stir the donut batter.
End with adding in your warm water or milk to the batter and stir till smooth and combined.
Preheat your mini donut maker. Once your green light turns off, it is ready. Begin to scoop your donut batter into each mini donut ring, about 1 1/2 tablespoonfuls of batter. We used a cookie scooper to help with the scooping.
Once all rings are filled, close the donut maker and let bake for 2-3 minutes. Check and see if they feel done. If so, remove carefully with a knife. Repeat process till all donut batter has been baked.
Remove donuts from pan with a knife.
For the topping, mix sugar, cinnamon, and cardamom together. Very lightly coat each donut in butter or oil (about 1 tablespoon) and toss in the cinnamon cardamom sugar.
Note: If you do not have a mini donut maker you can make these donuts in a regular donut pan. aBake for about 10-13 minutes at 350ºF. Also, if you do not have any donut pans, then you can make these as mini or regular cupcakes.

these look so good! in the picture they look JUST like the whole wheat mini bagels i buy for breakfast

I made these today and they were good. I didn’t see where the vanilla comes in so I added some fresh vanilla bean in. Also added cinnamon to the batter. And I didn’t coat the outside, just wanted to limit sugar intake. Tha you for a good recipe!
