Description

For when you want a donut without all the grease – baked chocolate cake donuts with the most mouth watering chocolate glaze.

Ingredients

  • FOR THE DONUTS:
  • 2 cups White Whole Wheat Flour
  • ¼ cups Cocoa Powder
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 2-⅓ cups Sugar
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Salt
  • ¼ cups Unsweetened Applesauce
  • ½ cups Yogurt (greek Is Great)
  • ½ cups Buttermilk
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • _____
  • FOR THE GLAZE:
  • ¾ cups Chocolate Chips (semi Sweet Or Dark)
  • 1 Tablespoon Light Corn Syrup
  • 3 Tablespoons Butter
  • ¼ teaspoons Vanilla

Preparation

For the donuts:
Lightly grease a donut pan (or muffin tin) and preheat oven to 350ºF.

Sift all dry ingredients together in a large bowl. Add the applesauce and mix until it makes coarse crumbs.

Whisk together the yogurt, buttermilk, eggs and vanilla in a separate bowl. Add this mixture to the flour mixture and stir until just incorporated.

Fill a Ziploc bag with the batter and cut a slit in the corner. Pipe the batter into each cup about 1/2 to 2/3 full. Bake for about 10-12 minutes, until the donuts spring back when lightly touched. Let cool slightly before glazing.

For the glaze:
Melt chocolate chips, corn syrup, butter and vanilla together in a small bowl in the microwave at 30 second intervals, stirring in between each interval (you can also heat it in a small saucepan over the stove, stirring constantly over low heat). Once melted, dip the slightly cooled donuts into the glaze, then set donuts on some parchment paper and allow glaze to set for about 30 minutes before serving.

I really liked these! I cut the sugar by half and left out cocoa powder to experiment with flavors. GREAT donuts and FANTASTIC JOB!!!!!!

I found this to be a good base recipe, but it needs some tinkering. First, 2 1/3 C of sugar is too much. I cut it to 1 C. If I wasn’t going to glaze them, I would probably increase it to 1 1/3. Second, they weren’t chocolaty enough for me. Next batch I’m going to try increasing the cocoa powder.
They didn’t really have a cake donut consistency, not sure if this is because of the relatively low fat content or use of regular flour (vs cake flour). I will make these again. My kids loved them!
