Here is a flatbread of pronounced character suited to a variety of occasions. It is good hot—or not. And it transports easily, thus making it a bread of many uses: for picnics, as an appetizer, or as part of a light lunch. Or perhaps with a salad that is also composed of Mediterranean or Middle Eastern flavours.

wow just looked for a recipe yesterday for zucchini bread and ended up making a different recipe….. will try this soon

This is excellent! I was searching for a healthy version of zucchini bread and this caught my eye. It is so tasty toasted and spread with a bit of butter. My husband and toddler love it as well.

Yummy! I love baking with applesauce which is what attracted me to this recipe after browsing through many others. I didn’t have any wheat flour, so I used unbleached all purpose and 4 C. zucchini (I over grated) and added a pinch of nutmeg. Will definitely make this recipe again and I already passed it on to my girlfriend! Thanks

Very good. I substituted barley flour and left out raisins (we’re not big fans) and walnuts (didn’t have any) and still yummy. I made them as mini muffins, got 32 out of the batch…and if my figgering is correct…they are less than 1 WW point each! With a tsp of butter…around 1.5!
