Description

This bread is so yummy, especially right out of the oven with butter. It will make your house smell amazing!

Ingredients

  • 2 cups Sugar
  • 3 whole Eggs
  • 1 cup Vegetable Oil
  • 1 teaspoon Vanilla
  • 3 cups Flour
  • 1 teaspoon Salt
  • 3 teaspoons Cinnamon
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Baking Powder
  • 2 cups Grated Zucchini
  • ½ cups Walnuts

Preparation

1. In a small pot on medium-low heat, heat the sugar, eggs, oil, and vanilla until foaming. Set aside.

2. In a large bowl, mix flour, salt, cinnamon, baking soda, baking powder, grated zucchini, and walnuts until blended.

3. Add all ingredients together and stir.

4. Pour mixture into 2 greased and floured loaf pans.

5. Bake at 350 degrees for 60-75 minutes or until an inserted toothpick comes out clean.

This zucchini bread is the BEST! My fiancé made it twice in only one week! He said it was very easy to make and they were super delish! I ate one or maybe two for breakfast every day last week! Way to start the New Year’s weight loss resolution!
