Description

Moist Zucchini Bread that is easy to make and delicious!

Ingredients

  • 2 cups All Purpose Flour, Sifted
  • 1 cup Granulated Sugar
  • ¼ teaspoons All Spice
  • ¼ teaspoons Cloves
  • ¼ teaspoons Nutmeg
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 whole Large Eggs
  • ¾ cups Oil
  • 1 teaspoon Vanilla Extract
  • 2 cups Grated Zucchini, About 3 Small To Medium Zucchinis

Preparation

Preheat oven to 350ºF. Spray a 10-inch loaf pan with cooking spray and use a paper towel to wipe up the excess oil. Flour the loaf pan and set aside.

Combine all of the dry ingredients in a medium bowl.

Whisk eggs, oil and vanilla in a large bowl. Gradually add the dry ingredients to the wet ingredients and stir with a rubber spatula or wooden spoon to combine. Add grated zucchini and stir. It may seem a bit difficult or hard to mix it all together at first but the moistness from the zucchini will help it all come together.

Pour mixture into the prepared loaf pan and bake on the middle rack for 50 to 60 minutes or until a inserted toothpick comes out clean.

Let sit in the pan for 10 minutes and then let cool on a wire rack.

Delicious!!! While visiting my mom, we had an extra large zucchini we wanted to make into bread. After searching for my Grandmom’s recipe for some time, we decided to look for one here. From what we could recall this recipe was closest to the one we had in our family, so we gave it a try… And boy oh boy, was it a success! We decided to make mini bundt cakes instead of loaves, so that we could share with our friends and neighbors easier. They were a HUGE hit! Everyone loved them and is eagerly awaiting us to make them again. (Note: we didn’t have any Allspice in the house so we chose to leave it out and added a tiny bit more of the remaining spices in it’s place instead.) we are looking forward to making this recipe again and again!!!
