Description

I was looking to duplicate the flavor of caramel apples in a reasonably healthy muffin suitable for breakfast or after school snacks. My kids tell me I nailed it!

Ingredients

  • 2 whole Large Eggs
  • ⅓ cups Milk
  • ⅓ cups Vegetable Oil
  • ⅔ cups Unsweetened Applesauce
  • 1 teaspoon Vanilla
  • ⅓ cups Brown Sugar
  • ⅓ cups Old Fashioned Rolled Oats, Or Up To 1/2 Cup
  • 1-¾ cup Whole Wheat Flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ⅓ cups Butterscotch Chips, Or Up To 1/2 Cup

Preparation

Preheat oven to 350 degrees. Spray or grease or line a standard muffin pan.

Mix eggs, milk, vegetable oil, applesauce, vanilla, and brown sugar together in a large bowl. Add oats, stir well. Dump whole wheat flour, baking powder, and salt on top of the wet team, then stir until nearly combined. Toss the butterscotch chips in and finish stirring until just combined.

Fill prepared muffin cups 2/3 to 3/4 full.

Bake 20-25 minutes (usually 25 for me) until lightly browned.

If you make this in a mini-muffin pan, cut down the bake time to 15-20 minutes.

This is also great with a half an apple, cored and chopped fairly small (unpeeled) mixed in with the butterscotch chips.
