Description

Incredibly moist, sweet, banana muffins with peanut butter and chocolate chips. My kids loved these, including my picky eater who doesn’t eat any fruit! I should call these miracle muffins.

Ingredients

  • ½ cups Unsalted Butter
  • ½ cups Packed Dark Brown Sugar
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Kosher Salt
  • 1-½ teaspoon Vanilla Extract
  • 1-½ cup Mashed, Ripe Banana (about 3 Large)
  • ¼ cups Honey
  • 2 whole Extra Large Eggs
  • 2 cups Whole Wheat Flour
  • 1-¼ cup Chocolate Chips And Peanut Butter Chips, Combined

Preparation

Preheat oven to 350 degrees. Line a 12-count muffin tin with muffin cups or grease pan well (I used butter).

Beat together butter, sugar, baking soda, salt, and vanilla in a large bowl until smooth. Add banana, honey, and eggs, beating until smooth. Add flour and chocolate chips, mix well.

Spoon the batter into the muffin cups, filling almost to top. Bake until a cake tester inserted in the center of a muffin comes out clean, 23 to 28 minutes. Remove from the oven, let cool a few minutes, then transfer to a rack. Enjoy!

These turned out great! I didn’t rate them just b/c I made a few changes. I did half whole wheat and half all purpose flour. Also, I didn’t have peanut butter chips so I used only regular chips. Really yummy though, thanks!

I just made these for my sons class snack tomorrow. I was looking for something healthy and yummy that 4th graders would like, and these fit the bill perfectly! My husband, who is a health food (ie whole wheat flour) hater, even really liked them. Thanks for a great recipe- this will replace any others I have been using.

These were great! I used half and half white and wheat flour and they turned out perfect. I will be making them often

I have made these a four or five times now and they always turn out great! Last time I was out of butter and substituted applesauce and they were still great! Less fat and I didn’t notice an apple taste at all. Thanks for a great recipe!

This is a good recipe, especially because of the peanut butter chips…I usually eat banana muffins with peanut butter!

I’m not a huge fan, in general, of wheat flour so maybe I’d try it with white flour next time?
