Description

A quick and extremely delicious go to recipe for banana muffins with whole wheat flour. I use semisweet mini chocolate chips for a little added contrast.

Ingredients

  • ½ cups Unsalted Butter, At Room Temperature
  • ½ cups Granulated Sugar
  • ¼ cups Brown Sugar, Packed
  • 2 whole Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3 Tablespoons Ground Flax Seed (optional)
  • 4 whole Ripe Bananas, Mashed
  • ½ cups Mini Semi-sweet Chocolate Chips

Preparation

Cream butter with sugars until light and fluffy. Then add eggs, one at a time until fully incorporated – mixture will look a little lumpy. Stir in vanilla.

In another bowl, combine flours, baking soda, salt, and flaxseed.

Add dry ingredients along with mashed bananas to butter/sugar/egg mixture. Stir until JUST combined, then fold in chocolate chips.

Using a 1/4 cup ice cream scoop, divide evenly into a 12-count muffin tin lined with paper liners.

Bake at 350 degrees for 20-25 minutes, until toothpick inserted into centre comes out clean.

Note: you can use both sugars, or 3/4 cup of one kind if necessary. I like the caramel flavor of the brown sugar, so I divide between the two.

These muffins are great! I used all whole wheat flour instead of half whole wheat/half all purpose. I also used Hershey’s Toffee chips in place of the chocolate chips. It made 19 regular sized muffins.

I’ve used this recipe for years and it is always a big hit! I make mini muffins and bake them for 25 minutes.

I’ve started messing with the recipe to make it healthier with no complaints from the hubby and kids…..sub olive oil for butter, honey or raw sugar for brown/white combo. I’ve added up to six bananas, just depending on how many needed to be used.

Can’t go wrong with this recipe!

These turned out absolutely delicious! My kids cannot stop eating them. I followed the recipe exactly, it ended up making a dozen regular size plus a dozen mini-muffins.
