Description

Light, fluffy scones studded with fresh strawberries and drizzled with white icing!

Ingredients

  • FOR THE SCONES:
  • ¼ cups Milk
  • 1 whole Vanilla Bean, Scraped Of All Seeds
  • ½ cups Cream
  • 1 cup Chopped Fresh Strawberries
  • ½ cups Sugar
  • 1 cup Whole Grain Pastry Flour
  • 1 Tablespoon Baking Powder
  • 1 cup All-purpose Flour
  • ½ teaspoons Salt
  • 6 Tablespoons Cold Butter, Sliced Into Small Pieces

  • FOR THE ICING:
  • ½ cups Powdered Sugar
  • 1 teaspoon Milk

Preparation

Preheat oven to 425F.

Mix together the vanilla bean seeds, strawberries, cream and milk in a small bowl. Set aside.

In a large bowl, combine the flours, sugar, baking powder and salt. Cut in the butter and work mixture together with your fingertips until it reaches the consistency of sand.

Add the strawberries and milk to the dry ingredients and mix together until a shaggy, wet dough forms.

Pat dough into a large circle on a lined baking sheet and cut into eight pieces (like cutting a pie). Separate the pieces about an inch apart and bake for 16 minutes or until golden.

Let scones cool completely while you combine the powdered sugar and milk to make the icing.

Drizzle icing over scones and serve.

First time I have ever tried making scones… and they turned out with the original recipe you posted. I did use 2 tsp of vanilla extract instead of vanilla beans. Also, I used agave nectar instead of sugar – 1/3 cup. I couldn’t divide the dough on the parchment because it was too gooey, but I did mark in the cuts and recut them once I took it out of the oven. It worked for me. Thanks for the fun recipe!

I have a question regarding these scones. I printed this recipe out on Feb 28th. The recipe I have in my hand calls for 1 whole vanilla bean, 1 cup strawberries, 1 cup milk, 2 cups of pastry flour, 1/2 cup sugar, 1 T baking powder, 1/2 t salt and 6 T cold butter. When I attempted to make these this morning, I got the consistancy of cake batter. I continued to add flour to get the texture I needed. I decided to go back to this site and double check the recipe and wow, it’s not even the same recipe that I have on paper (added by EatLiveRun on 2/24/11, Whole Grain Strawberry Pop Tart Scones). Has the recipe been updated? That is weird. Just wondering…

You can find whole grain pastry flour in bulk bins at most every health food store–like whole foods!

Where do you you buy whole grain pastry flour? Also, is there a certain brand you use? The scones look yummy.

Oh these were good…very good. I followed recipe exactly except subbed vanilla extract for beans. I also just ‘dropped’ them on a greased sheet instead of cutting into wedges…got 16 that way. Great recipe!

These were delicious! I made them twice- the first time I didn’t have fresh strawberries, so I added homemade strawberry jam and reduced the amount of cream. The second time, I used fresh strawberries as the recipe called for. Both times they were a big hit and I really enjoyed them. I would definitely recommend making these!
