Description

I’ve been trying to figure out new ways to cook things so that I don’t have to turn on our oven. I’ve had to get pretty creative!

I LOVE waffles and I’ve discovered that there are lots of other things you can cook with a waffle iron! I was craving Banana Bread so bad the other day, so I thought I’d give it a try on the waffle iron. It turned out perfectly!

Ingredients

  • ½ cups Melted Butter
  • 3 whole Over-ripe Bananas
  • 1 cup Sugar
  • 2 whole Eggs
  • 1-½ cup Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda

Preparation

Preheat waffle iron and spray with nonstick cooking spray. Melt butter and set aside to cool.

In a mixing bowl, mash bananas well. Beat sugar and eggs.

Combine flour, salt, and soda. Add gradually to the sugar mixture. Pour in melted butter and mix well.

Pour banana bread batter into the waffle iron as you would a waffle. You’ll have fresh banana bread in minutes! Frost with cream cheese frosting for fun!

What a clever idea! I can’t wait for Sunday morning to try this. And now I’m wondering, what else would work…. :)

So yummy! Just made them for breakfast for the week. I added almond butter, and used egg white substitute instead of eggs. Perfect, great idea!

I made these waffles yesterday morning and the results were very tasty! I was a little worried because the batter seemed so thick comapred to other waffle batters but my waffles came out perfectly. It really is like eating banana bread. My daughter who is 7 tried one plain, one with butter and one with syrup. Her favorite? All three! I liked my plain (as I like my banana bread plain).

I also added 1/2 cup pecans to the last half of the batter and that was tasty too. I am thinking next time I’ll add pecans and chocolate chips.
