Description

So many good things all in a banana bread.

Ingredients

  • 1 cup Mashed Very Ripe Bananas, About 3
  • ¼ cups Canola Oil
  • 1 Tablespoon Instant Coffee Dissolved In 1 Tablespoon Hot Water
  • ½ cups Plus 2 Tablespoons Brown Sugar, Packed
  • 1 cup All-purpose Flour
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Kosher Salt
  • ⅔ cups Sweetened, Flaked Coconut
  • ⅔ cups Milk Chocolate Chips (or Any Dairy-free Chocolate Chip To Make It Vegan)
  • 1 Tablespoon Cinnamon Sugar (optional)
  • Caramel Sauce, To Serve

Preparation

Preheat the oven to 350 degrees F. Lightly grease and flour a 9 x 5-inch loaf pan.

In a large mixing bowl, whisk the bananas, oil, coffee and sugar briskly to combine. In a separate bowl, sift together the flours, baking soda, and salt. Dump into the banana mix. Use a wooden spoon to mix until the wet and dry ingredients are just combined. Fold in the coconut and chocolate.

Transfer the batter to the prepared pan and sprinkle with cinnamon sugar if you’d like. Bake for 45 to 60 minutes. The top should be lightly browned and a knife inserted through the center should come out clean. Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely. Slice and lather it in caramel sauce and enjoy!
