Description

Delicious and sweet, this is my dearest cousin’s recipe. I made them the other day and realized that these are the best muffins I’ve ever made.

Ingredients

  • FOR THE MUFFINS:
  • 2-¼ cups Flour
  • 3-½ teaspoons Baking Powder
  • 1 cup Sugar
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ cups Butter
  • 1 whole Egg
  • 1 cup Milk
  • ½ teaspoons Vanilla
  • 1 cup Blueberries (or Raspberries!)
  • _____
  • FOR THE TOPPING:
  • ½ cups Sugar
  • 1 pinch Cinnamon
  • ½ cups Flour
  • ½ cups Soft Butter

Preparation

Muffins:
1. Put together the first 5 dry ingredients (flour, baking powder, sugar, salt, cinnamon). Then cut in 1/2 cup butter.
2. In a separate bowl combine the egg, milk and vanilla.
3. Add to dry mixture stirring gently until blended, then fold in the blueberries.
4. Pour into muffin pan.

Topping:
Mix together the second amounts of sugar, cinnamon and flour. Cut in the butter and sprinkle on top of muffins.

Place in oven at 350 for 25-30 minutes.

Are others really making 12 muffins with this recipe? I made 16 but should have portioned it into 18, because several overflowed a bit. Perhaps it’s just that I’m at high altitude or that I made them with non-dairy milk & butter? Mine didn’t turn out the prettiest, but they are absolutely delicious!

These are most definitely the best blueberry muffins ever — make them — just be prepared for extra calorie consumption when you do because you’ll eat three in a row at a minimum!

I didn’t make the topping, but other than that, used the exact recipe. My husband and boys liked them, but I thought they had very little flavor and were a tad dry.

These were great. My kids loved them, even the one who doesn’t like any fruit except for apples. I used frozen blueberries that we picked and it was so satisfying to make such a yummy muffin with them. Thanks for sharing.

I make these about every week during the summer with fresh blueberries. No need to want to try another recipe. I don’t even do the topping (because I”m lazy)and they are fantastic!

I’ll say upfront that I skipped the topping, but that was only because they took longer to bake than I had left for that morning. :-) These were great muffins, and they turned out absolutely huge! I definitely needed all 30 minutes of the baking time. But so good!
