Description

This is not your usual cornbread! This could be dessert! The Baldpate Inn is located in Estes Park, Colorado. All of their food is homemade. One time on a family vacation, I bought a small book called Baldpate Collections, which includes some of the Inn’s famous favorite recipes.
O.M.G. this is so good!

Ingredients

  • 1 cup Butter
  • 1 cup Sugar
  • 4 whole Eggs
  • 2 cups Creamed Corn
  • ½ cups Monterey Jack Cheese, Grated
  • ½ cups Medium Cheddar Cheese, Grated
  • 1 cup All Purpose White Flour
  • 1 cup Cornmeal (I Use Lambs Brand)
  • 4 teaspoons Baking Powder
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350 degrees. Using an electric mixer, cream butter and sugar, then add eggs one at a time. Gradually, mix in corn and cheeses. Stir in the remaining ingredients. Spread evenly into a greased 9×13 cake pan. Place in the oven, close door and IMMEDIATELY reduce oven temperature to 300 degrees. Bake one hour. When it’s done, the top will still seem moist-looking, not dry as a cake would appear. The center should be set, not gooey. Serve warm.

If you follow the instructions this is a rich sweet moist cornbread. Make 2 batches, one for you n one for your party. This is so popular that in the 15 years I have been making it I have yet to come home with leftovers from a party. Enjoy

This has a good flavor, but wasn’t quite moist enough for me. I like my cornbread to be almost cake-like in texture.
