Preheat oven to 350ºF. It’s pretty basic: Whisk together the sugar, sweet potato puree, oil, eggs, milk and vanilla until smooth. Fold in the flour, baking soda and salt until just combined.
Line a 9×5 loaf pan with foil and spray with nonstick spray. Pour batter in and smooth the top.
Bake at 350ºF for 60-75 minutes, or until a toothpick inserted comes out cleanly. Use the foil to remove from the pan as soon as you pull it out of the oven (careful, it’s hot!) and let it cool on a wire rack.
