This bread is the little black dress of food: dress it up with nut butter and jam, or dress it down plain with a steamy bowl of soup. Just make sure you make it!
Preheat oven to 350ºF. It’s pretty basic: Whisk together the sugar, sweet potato puree, oil, eggs, milk and vanilla until smooth. Fold in the flour, baking soda and salt until just combined.
Line a 9×5 loaf pan with foil and spray with nonstick spray. Pour batter in and smooth the top.
Bake at 350ºF for 60-75 minutes, or until a toothpick inserted comes out cleanly. Use the foil to remove from the pan as soon as you pull it out of the oven (careful, it’s hot!) and let it cool on a wire rack.
This Low Fat Banana, Date & Nut Bread may be low on fat, but it’s not low on flavor! It’s perfect to enjoy with that morning tea or coffee. This recipe makes two loaves, one to eat now, and one to put in the freezer to enjoy later.
