Description

Moist and hearty, with the warm flavors of sweet potato, cinnamon, and ginger. These muffins are perfect for fall baking.

Ingredients

  • 1 whole Medium Baked Sweet Potato
  • 1 whole Ripe Banana
  • 1-½ cup Whole Wheat Flour
  • ½ cups Old Fashiond Oats (plus Additional For Muffin Tops)
  • ¾ cups Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1-½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Freshly Grated Ginger
  • ¼ cups Honey
  • ¼ cups Milk
  • ½ cups Canola Oil
  • 2 whole Eggs, Lightly Beaten
  • 2 teaspoons Vanilla

Preparation

Preheat oven to 400ºF.

Beat together sweet potato and banana.

In a medium bowl combine flour, oats, sugar, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.

Stir honey, milk, oil, eggs, and vanilla into sweet potato mixture. Fold in dry ingredients.

Fill greased muffin tins with batter and top with additional oats.

Bake for 16-18 minutes (12-14 minutes for mini-muffins).

Yummy! I had to make some alterations based on what I had. I replaced all of the oil with applesauce and used 1/2 cup of sugar and 1/4 cup flax seed meal. I also had to use ground ginger, but I added a tiny bit of crystallized stem ginger too to make up for the bite of fresh ginger. These were great! I forgot to add the salt, but I didn’t even notice until I was calculating the calories. My changes make for 175 calories a muffin, which is great because they are so hearty and kept me going all morning! Thank you!

Really good! I used applesauce for half of the oil and they still came out good. Passed the kid test!

I made these for my students and they loved them. They were moist and a great way to sneak in veggies and fruits into my kids diet.
