Description

No oil, no sugar and only 1 gram of fat?? Seriously an incredible banana bread!

Ingredients

  • 2  Eggs
  • 1 teaspoon Pure Vanilla Extract
  • ½ cups Milk (1%)
  • ½ cups Applesauce (unsweetened)
  • 6 whole Packets Of Sweetleaf Stevia (the Small, Individual Size Packets) Or 1/2 Cup Of Honey
  • 3  Bananas, Mashed
  • 1 cup Fresh Or Frozen Blueberries
  • 1 Tablespoon Flaxseed Meal
  • 2 cups Whole Wheat Pastry Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ cups Water
  • ½ cups Walnuts Or Pecans, Chopped (optional)

Preparation

Preheat oven to 325 degrees F.

Into the bowl of a stand mixer add eggs, vanilla, milk, applesauce and Stevia or honey. Blend well. Add bananas and blueberries and mix until combined.

In another bowl combine flax, flour, salt, baking powder and baking soda and mix well.

Mix one cup of the flour mixture into the creamed mixture. Add the other cup of flour mixture and then the water and mix until it’s all incorporated. If you are adding optional nuts, mix them into the batter now.

Spray a loaf pan with nonstick cooking spray and pour the batter mixture into the pan.

Bake in the preheated oven for 60-75 minutes until a toothpick in center comes out easily with just a few crumbs.
