I can’t take credit for this recipe, because it was one of my teachers who made this for class and it was AMAZING! I had a slice for breakfast, but it would be a good snack or dessert.

Ingredients

  • FOR THE BREAD:
  • 2 cups Fresh Strawberries
  • 3-⅛ cups All-purpose Flour
  • 2 cups White Sugar
  • 1 Tablespoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1-¼ cup Vegetable Oil
  • 4 whole Eggs, Beaten
  • 1-¼ cup Pecans, Halved Or Chopped

  • FOR THE CREAM CHEESE FROSTING:
  • 8 ounces, weight Cream Cheese
  • 3-¾ cups Confectioners Sugar (Sifted)
  • 2 Tablespoons Milk (I Use Skim Milk)
  • 1 teaspoon Vanilla

Preparation

Preheat oven to 350 degrees. Butter and flour (or use cooking spray) two 9 x 5 loaf pans.

Slice strawberries and place in a bowl. Sprinkle lightly with sugar (it helps bring out the sweetness).

Combine flour, sugar, cinnamon, salt, and baking soda in a large bowl. Mix well. Blend oil and eggs into the strawberries (strawberries will become small chunks).

Add the strawberry mixture to the flour mixture, stirring well. Stir in the pecans. Divide batter into the two loaf pans.

Bake for 45-50 minutes, or until a toothpick inserted comes out clean. Let cool on wire racks for 10 minutes. Turn loaves out and cool completely.

For the frosting:

Beat cream cheese with an electric mixer until soft, about 30 seconds. Add confectioners’ sugar, milk, and vanilla. Beat on low speed, about 30 seconds. Stir well and continue to beat until fluffy, about 2 minutes.

Spread onto loaves.

Excellent recipe! It was easy to make, and definitely a crowd pleaser. I loved the bright pink color that the batter made. The recipe will be a seasonal favorite in my house from now on. Thanks for sharing!

I made this for my dad when he visited and we both really liked it! There was a lot of frosting, so I’d also recommend cutting the frosting recipe in half (although I did finish it off with some graham crackers, never a bad idea!)

I made this last night to use up some frozen strawberries I had in the fridge. It was a great hit in my house, though some found it to be a little rich…I thought about using applesauce in place of the oil, but I’m not sure how well that would work! This was very easy to make, and certainly not very time consuming….The icing recipe makes a lot, so if you aren’t into icing, you may consider making a little less!
