Description

A great mid-morning snack and it’s healthy, too.

Ingredients

  • 6 cups All-purpose Flour
  • 3 Tablespoons Baking Powder
  • 1 Tablespoon Salt
  • 2 Tablespoons Dried Herbs
  • 3 cups Cheddar Cheese, Grated
  • 1 pound, 5-¼ ounces, weight Spinach, Cooked, Drained And Chopped
  • ½ pounds, 2-⅝ ounces, weight Margarine
  • 1 cup Milk
  • 1 cup Water
  • 6  Eggs

Preparation

Prheat the oven to 180ºC (350ºF). Spray 4 muffin pans. Sift the dry ingredients together. Add the herbs, cheese and spinach. Mix through. Melt the margarine in a jug, add the water and the milk to it and mix in the eggs and beat well. Add the wet ingredients to the dry. Mix through. Scoop the mixture into the muffin pans 2/3 full. Bake for 25 minutes. Serve lukewarm with butter and cheese.
