Description

These biscuits add a hint of spice to the plain sweet potato flavor with garlic powder and pepper. The maple glaze gives a touch of sweetness. With a little preparation and time to bake, you can have fresh-baked bread on your table to brighten any meal!

Ingredients

  • FOR THE BISCUITS:
  • 3 cups Whole Wheat Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 1  Medium Sweet Potato, Cooked
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Maple Syrup
  • 1 cup Non-fat Buttermilk, Warm
  • FOR THE GLAZE:
  • 3 Tablespoons Maple Syrup
  • 1 Tablespoon Butter Spread

Preparation

1. Combine dry ingredients in large bowl. Mix well.
2. Mash sweet potato with olive oil and maple syrup in a separate bowl and set aside.
3. Add buttermilk to dry ingredients. Spoon in the mashed sweet potato. Stir with a spoon or fold in with hands until a ball of dough forms. If dough is too sticky, add more flour.
4. Place ball of dough on a floured surface. Knead by hand and press out dough with fingers.
5. Using a biscuit cutter or glass, cut out biscuits and transfer to parchment paper or greased cookie sheet.
6. For the glaze, warm the maple syrup and butter spread in the microwave and stir together until well combined.
7. Brush a light glaze onto each biscuit. (If you have leftovers, they work well as a dipping sauce.)
8. Bake at 400ºF for 15-20 minutes or until biscuits start to turn brown.
9. Allow at least 5 minutes to cool before serving.
10. Store biscuits in an airtight container.
