Description

These tasty morsels are great as a salad or soup accompaniment. Making them in mini muffin tins saves the rolling and cutting that you have with traditional biscuits!

Ingredients

  • 1 cup Sour Cream, Room Temperature
  • ½ cups Butter, Room Temperature
  • 4 Tablespoons Cream Or Milk
  • 2 Tablespoons Dry Ranch Salad Dressing Mix
  • 1 Tablespoon Chopped Fresh Chives
  • ¼ cups Freshly Grated Parmesan Or Romano Cheese
  • 2 teaspoons Sugar
  • 2 cups All-purpose Flour
  • 3 teaspoons Baking Powder
  • ½ Tablespoons Baking Soda

Preparation

Preheat oven to 350 degrees.

Spray a 24-cup mini muffin tin with nonstick cooking spray.

In a mixing bowl, combine sour cream and butter and mix well, about 3 minutes. Stir in cream, dressing mix, chives, cheese and sugar until well blended. Add flour, baking powder and baking soda, stirring just until all dry ingredients are mixed in. Do not overmix!

Drop walnut-sized scoops of batter into prepared muffin tins and bake for 15 minutes. Let rest 5 minutes before removing from pan.

This looks like a great quick muffin to make for dinner when you need some kind of bread. And I always end up with lots of sour cream to use up.

These are very good and flavorful! Mine are a little dry so next time I’ll add a little more milk to make the dough come together better. Will definitely make these again!
