Description

Savoury Cheese & Chive Scones.

Ingredients

  • ½ cups Butter
  • 2 cups Plain Flour
  • 1 cup Brown Flour
  • 1 Tablespoon Plus 3/4 Teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 3 cups Grated Cheese, Divided
  • Finely Chopped Chives, To Taste
  • Finely Chopped Parsley, To Taste
  • 1  Egg
  • ½ cups Milk, Plus 5 Tablespoons, Divided

Preparation

Preheat oven to 175ºC (about 350ºF) and lightly grease a large baking tray.

Put the butter in the freezer for 10–15 minutes until it is really solid.

In a large mixing bowl, mix flours, baking powder, salt and pepper. Using a butter knife, cut the butter into the flour mixture until butter is the size of peas. Stir in 2 1/2 cups cheese and chopped herbs.

In another bowl, beat egg and 1/2 cup milk together. Add to the dry ingredients and mix until the dough can be formed into a ball.

On a clean, floured surface, roll the dough out to about 1-inch thick. Cut however you like; I like pizza pieces or rounds. Place on a baking tray. Brush the tops with remaining milk, top with the remaining 1/2 cup grated cheese and bake for 20–25 minutes until golden brown on top.
