Quick and easy and very delicious.
Note: Measurements entered in metric units.
Using an electric mixer, beat the eggs and cottage cheese until creamy. Then add the yogurt, oil, mustard, spices (salt, pepper, crushed red chili flakes to taste), peppers, garlic, and sausage.
Sift the flour with the baking powder and gently fold it in the batter, using a whisk or a wooden spoon.
Divide the batter among 12 muffin cups (lined with muffin liners) and bake in a preheated oven at 200ºC (390ºF) for about 20-25 minutes (mine were done after exactly 22 minutes).
Serve warm with a salad of your choice.
