Description

A savory bread with Roquefort (a type of blue cheese) pears and walnuts. Absolutely delicious.

Ingredients

  • ½ Tablespoons Butter For Pan
  • 2 whole Pears
  • 4 ounces, weight Roquefort Or Blue Cheese
  • 1-⅓ cup Flour
  • 1 Tablespoon Baking Powder
  • 3 whole Eggs
  • ½ cups Olive Oil
  • ½ cups Milk
  • 1 teaspoon Salt, Or To Taste
  • ⅓ cups Walnut Halves

Preparation

1. Preheat oven to 350°F. Butter a standard loaf pan and set aside. Peel, core and cube pears. Crumble blue cheese roughly. Set both aside.

2. In a large bowl, combine flour and baking powder.

3. In a medium bowl, beat eggs, oil, milk and salt for about 30 seconds with a hand mixer. Add mixture into the flour preparation, and stir just until all the ingredients are incorporated, not more. Add pears, cheese and walnuts.

4. Pour batter into the buttered pan. Put into the preheated oven and bake for 40 minutes, or until the top is golden and an inserted toothpick comes out with barely any crumbs. Serve warm or at room temperature.

A delightful savory/sweet combination of pungent blue cheese, crunchy walnuts and juicy bursts of pear in a tender, golden bread. I halved the amount of salt and might cut it completely next time as the roquefort is already plenty salty. I also had to add 10 minutes to the baking time, but maybe because I didn’t preheat the oven long enough. In any case, this bread is super easy to make and really delicious, warm or cold!
