Description

Roasting the peaches brings out their flavor and makes these scones even more delicious!

Ingredients

  • FOR THE ROASTED PEACH:
  • 1 whole Ripe Peach Peeled
  • 2 Tablespoons Sugar
  • 2 Tablespoons Hot Water
  • FOR THE SCONES:
  • 2 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • ½ teaspoons Salt
  • 5 Tablespoons Cold Butter
  • 1 cup Cold Heavy Cream, Plus 2 Tablespoons For Brushing On Scones
  • 1 Tablespoon Turbinado Sugar

Preparation

Preheat your oven to 400ºF.

Cut the peeled peach into bite-size chunks and place in a single layer on a small sheet pan. Combine the sugar and hot water and pour over the peaches. Place in the oven and roast for about 15 minutes or until the juices are dissolved. Let cool.

Increase the oven temperature to 425ºF.

Combine the flour, baking powder, sugar, and salt into a large bowl. Cut your cold butter into small pieces and then mix with a pastry blender or 2 forks until it resembles coarse crumbs. Gently fold in the roasted peaches. Add in 1 cup cold cream and shape the dough into a ball; it will be sticky.

Form it into a flat circle about 1 inch thick on your counter. Cut into 8 wedges. Place the wedges on a greased baking sheet. Brush them with the remaining 2 tablespoons cream, sprinkle with turbinado sugar, and bake for 12-15 minutes until light brown. Let cool on a wire rack for about 10 minutes before serving.

My husband is not a fan of scones and he really liked these. He said they were the best variation I have ever made. My boys all ate 2 as well. We will definitely be doing this one again.

These scones are to.die.for! Super easy to put together-even it being my first time I’ve ever made scones- and they were so delicious I’ve all ready made them two more times. I also froze some during the summer so that we could enjoy them in the fall and winter and they are just as delicious after being warmed up in the oven!

I followed the directions exactly – no subsitutes or anything and I was so disappointed with this recipe. I’ve made scones before and this dough was nothing like I’ve seen before when working it up for scones. It was gooey and way too sticky. Also, even for scones, these were not sweet enough — they definitely need more sugar. The roasted peaches gave a nice twang when you bit it, but all in all, very disappointing recipe. Sorry.
