Description

Texas-sized Pumpkin Muffins.

Ingredients

  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 cup Canned 100% Pumpkin
  • ⅓ cups Vegetable Oil
  • 2 whole Eggs
  • 1 teaspoon Pumpkin Pie Spice
  • 1-¼ cup Sugar
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • FOR THE TOPPING:
  • 1 Tablespoon Sugar
  • 1 teaspoon Cinnamon

Preparation

Preheat oven to 350ºF. Line a Texas-sized 6-cup muffin tin with 6 paper liners and spray each liner with nonstick spray. Or you can use a standard 12-cup muffin tin, but you’ll get about 10 muffins.

In a medium-sized bowl, sift together the flour and the baking powder. Set aside.

In a large bowl, whisk together the pumpkin, oil, eggs, spice, sugar, baking soda, and salt. Whisk until smooth.

Whisk in the flour mixture until combined. Do not over-mix.

In a small bowl mix together the sugar and cinnamon for the topping.

Divide the batter evenly among the prepared muffin cups, sprinkling the cinnamon-sugar on top of each muffin.

Bake for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool for 5 minutes before turning them out onto a cooling rack.

I received many compliments and recipe requests for these muffins. They were very moist, and they are much tastier when the cinnamon/sugar topping is sprinkled on heavy. I made one batch with a light sprinkle of the topping and a second batch with a heavy layer of the topping and everyone liked the heavier topping better. Next time I am going to chop up pecans to sprinkle on top along with the topping. Great recipe–I am going to make these for Thanksgiving.

These were good, but the pumpkin flavor wasn’t as strong as I would like. Great easy recipe!

So easy and delish! I had a craving and was glad I didn’t have to wait for butter to soften. I have to admit though, I may add cream cheese frosting next time instead of the cinnamon sugar, just for fun…
