Description

Cornbread mixed with pumpkin and drizzled with honey before baking. Yummy!

Ingredients

  • ¾ cups Cornmeal
  • 1 cup Flour
  • ¾ Tablespoons Baking Powder
  • ¾ teaspoons Salt
  • 1 whole Egg, Beaten
  • ½ cups Applesauce
  • 1 cup Milk
  • ¾ cups Pumpkin Puree
  • 1 teaspoon Vanilla
  • 2 Tablespoons Butter
  • ¼ cups Honey For Drizzling

Preparation

Preheat oven to 425ºF.

Sift together cornmeal, flour, baking powder, and salt. In a separate bowl, whisk the egg until foamy. Add in applesauce, milk, pumpkin puree, vanilla, and melted butter. Mix together. Once combined, add in flour mixture. Pour batter into a well-greased 8×8 glass bowl. Drizzle honey over the top the cornmeal batter. Bake for 20 minutes. Serve warm with butter and any extra honey.

I could not wait to try this recipe once I noticed it was made with pumpkin and applesauce! Those ingredients and just a tiny bit of butter make this cornbread a much healthier, lowfat choice. No skipping on the flavor either. It is moist and dense instead of grainy/fluffy/dry which usually makes cornbread not one of my favorites. One thing I had to change was the honey, I was out, so I dissolved 1/4 cup brown sugar and a little water and drizzled it on top before baking. Soooo Yummy! Thank you for posting. This is a keeper!
