Pumpkin Drop Biscuits with Citrus Honey Butter

Description

Light and fluffy, slightly sweet with a great pumpkin flavor. Ridiculously good with lots of citrus honey butter slathered on! If you’re going to make these, you must make the citrus honey butter too!

Ingredients

  • FOR THE BISCUITS:
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Granulated Sugar
  • ½ teaspoons Cinnamon
  • ¼ cups Cold Butter Cubed
  • ¾ cups Whole Milk (give Or Take 1/4 Cup)
  • ¾ cups Pumpkin Puree
  • ¼ teaspoons Vanilla Extract
  • FOR THE BUTTER:
  • ½ cups Butter, Softened
  • 3 Tablespoons Honey
  • 1 Tablespoon Orange Zest Or A Combination Of Orange And Lemon Zest

Preparation

Preheat oven to 350 degrees. Grease a baking sheet with nonstick cooking spray or melted butter and set aside.

In a large bowl, combine flour, baking powder, salt, sugar and cinnamon. Using a fork or pastry cutter, blend cold butter cubes into dry ingredients until it is similar to coarse meal. Stir in milk, pumpkin and vanilla until all ingredients are equally moist and flour is incorporated. (If you need a little more, add in about 1/4 cup more milk.) Drop by heaping tablespoonfuls onto the greased baking sheet. Bake for 15-20 minutes or until bottoms have browned slightly.

While biscuits are baking, whip butter, honey and zest together until smooth and light in color, about 2 minutes.

Serve biscuits warm with citrus honey butter.

Recipe tip:
If you wanted to cut these biscuits out rather then do a drop biscuit, then use 3/4 cup of milk. The dough will be less sticky and easier to work with. Flour your board liberally, roll out to be 1-1 1/2 inches thick and cut. Bake the same time.

These biscuits are perfection. I didn’t have any honey so I just ended up using regular butter at the end. I will definitely make these again very soon!

I am making these Sunday for my granddaughters. They love breakfast and they love bread with ‘butta’… This will be a hit I am sure!

I made these this morning and as they were baking my son woke up and called out, “What is that smell? It smells so good!” My 3 sons, husband and my aunt all loved these (I did too!). The honey butter was a perfect match. Thank you for sharing this recipe.

I’m sure they would turn out just fine if you used buttermilk, or regular 1%, 2% or fat free. Just make sure you make the honey butter to go along too–that’s my favorite part.

Oh my…. these are fabulous! Had just the right amount of pumpkin left from another recipe and I am oh so tired of making pancakes for breakfast – these were perfect. Just the right amount of sweetness. The butter truly makes them a stand-out!

So often I see rave reviews for something and try it only to be disappointed. That was not the case with these biscuits by any means. So soft, moist, delicious…with the perfect amount of sweet. I would also normally skip the butter but I didn’t this time (although I used all lemon) and it was fantastic! I really recommend making these ASAP! They weren’t time consuming either.

These were delicious! I brought them in to the office and sent some w/ my hubby to his office and everyone loved them. You def HAVE to make the butter!!! I would normally skip, but it makes a difference!

I’m not sure I can convey how amazing these were in writing. Let me just say this: I literally made myself sick by eating so many of them! The citrus honey butter is an absolute must. My kids scarfed them down along with me. Divine!
