Description

This is the perfect breakfast, snack, or dessert to get you in the holiday spirit.

Ingredients

  • 3 cups Organic Whole Wheat Pastry Flour
  • 2 teaspoons Baking Soda
  • 1-½ teaspoon Salt
  • 1-½ Tablespoon Pumpkin Spice
  • 3 cups Sugar
  • 4  Eggs
  • ½ cups Canola Oil
  • ¼ cups Orange Juice
  • 1  Orange, Zested
  • 1 can (15 Oz. Size) Pure Pumpkin
  • 1 cup Dried Cranberries

Preparation

Preheat oven to 350°F. Grease two 9×5 loaf pans.

In a medium-sized bowl, mix flour, baking soda, salt, and pumpkin spice.

In a large bowl, add sugar, eggs, canola oil, orange juice, orange zest, and mix well. Add dry mixture to wet mixture and stir until fully combined. Fold in cranberries.

Portion evenly into the greased loaf pans. Bake at 350°F for 50–60 minutes, until an inserted toothpick comes out clean.

Enjoy with a cup of coffee or bring to your upcoming holiday gathering!
