Description

I had half a can of leftover pumpkin and a few brown bananas. What’s a girl to do?

Ingredients

  • 2 cups All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Nutmeg
  • 2 whole Eggs, Beaten
  • 3 whole Bananas, Mashed
  • 1 cup Sugar
  • ⅔ cups Pumpkin Puree
  • _____
  • FOR THE STREUSEL:
  • ¼ cups Brown Sugar
  • 3 Tablespoons Flour
  • 2 Tablespoons Butter

Preparation

Preheat oven to 350F. Mix together dry ingredients and create a well in the center. In a different bowl, cream together all the wet ingredients. Pour into the well in the dry ingredients and stir just to mix. Batter should be lumpy. Top with streusel and bake for 45-55 minutes or until a toothpick inserted to the middle comes out clean.

For the streusel topping, combine brown sugar and flour. Then cut in the butter until the mixture is crumbly. Sprinkle on top before cooking.

This is a really good recipe! It took about50 mins to cook and came out just fine. Thank you for posting this recipe for everyone to try. Oh, I also added a little bit of chopped pecans.

This recipe has several major flaws. First, it doesn’t specify what size loaf pan to use. I used my 8×4 and it overflowed a little bit. Should have used my 9×5. Also, the recipe does not say whether to grease the pan. I opted to grease and flour mine, and it came out just fine. Finally, the recipe is vague when it says to mix all of the dry ingredients, then all of the wet. Generally sugar, although dry is mixed in with the wet ingredients, so that is what I did. In addition to the poorly written recipe, the bread itself came out bland and rubbery (No, I did not overmix. I believe the high volume of mashed banana and pumpkin gave it that texture.) Finally, I think the flavor of the brown sugar in the streusel did not match with flavor of the bread. It seemed out of place. A butter, flour, cinnamon mixture might work better to blend the flavors.

My family and I loved this! I didn’t quite cook it long enough, but we stil enjoyed it a lot!!

I love the flavor and texture of this. I did add a bit more cinnamon and nutmeg than it called for, only because I know I like more.

However, not knowing what size bread pan to use, I think I picked the wrong size. I tested at 50 minutes and it was no where near done. I tested again after 58 minutes and still not done. I waited another 7 minutes and still not done. Finally after being in the over for 80 minutes the tester came out almost completely clean, though not totally.
Next time I’ll put it in my bigger loaf pan or split it in to two even smaller pan.
