Description

These are light airy rolls, traditionally eaten with strawberry jam.

Ingredients

  • 3 whole Eggs
  • 1 cup Milk
  • 3 Tablespoons Butter
  • 1 cup Flour

Preparation

Heat oven to 425F.

Whisk the eggs together with the milk and butter.
Add flour slowly.

Preheat popover pan in the oven for 10 minutes.
Spray popover pan with nonstick spray. Pour batter into cups – they should be about half full.
Place the pan in the oven and bake for 20 minutes.
Without opening the oven, decrease the temperature to 350F.

Bake for approximately 25 minutes more. They are done when they are tall and tanned.

Note:

Popover pans are the best for this recipe, but muffin pans can work too. Just follow the 1/2 full guide, because they do puff up a lot.

The best pan would be cast iron, I think. In that case, the pan should be buttered before preheating.

Also, you can add herbs to the batter. That would be nice with a roast for dinner.

The main goal with these is to have them rise up quicky due to the high heat. This will create the cavity inside.

These turned out great. I baked them at 425 for the first 20 minutes and then turned the oven down to 350. They only only took about 10 minutes after that. I will definitely make them again.
