Description

Mini little muffins stuffed with mozzarella cheese, Parmesan cheese and pepperoni.

Ingredients

  • ¾ cups Whole Wheat Pastry Flour
  • ¾ teaspoons Baking Powder
  • 1 Tablespoon Italian Seasoning
  • 1 pinch Salt
  • 1 pinch Red Pepper Flakes
  • ¾ cups Non-fat Milk
  • ¼ cups Egg Substitute
  • 2 ounces, weight Mozzarella Cheese, Shredded
  • 2 Tablespoons Grated Parmesan Cheese
  • 1 ounce, weight Pepperoni (6 Slices, Cut Into Small Pieces)
  • ½ cups Store-bought Pizza Sauce (optional For Dipping)

Preparation

Preheat the oven to 375 F. Grease a 24-cup mini-muffin pan.

In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using). Whisk in the milk and egg.

Stir in the mozzarella, Parmesan and pepperoni. Let the batter stand for 10 minutes. Stir the batter and divide among the mini-muffin cups.

Bake until puffed and golden, 20 to 25 minutes.

Meanwhile, microwave the pizza sauce until warmed through
