Description

A quick and delicious breakfast treat!

Ingredients

  • FOR THE MUFFINS:
  • ½ cups Butter, Softened
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Sugar
  • 1 cup Crushed Pineapple (with Juice)
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • _____
  • FOR THE CRUNCH TOPPING:
  • 2 Tablespoons Butter, Softened
  • ¼ cups Brown Sugar
  • ½ cups Panko Bread Crumbs

Preparation

Preheat oven to 375ºF. In a large bowl, beat butter, eggs, vanilla and sugar together with an electric mixer. Stir in pineapple. Add flour and baking powder and stir just until dry ingredients are moistened. Spoon into a greased muffin tin.

In a separate bowl, combine all topping ingredients until well-combined. Sprinkle about a tablespoonful of topping over each muffin and press down gently with your fingertips. Bake for 15–20 minutes or until tops are lightly browned. Allow to cool for a couple minutes in the muffin tin and then move to a wire rack to cool.

Good, easy morning muffin. I made these with 1/2 cup sugar and 1/4 cup agave instead of a whole cup of sugar. I subbed half the flour for whole wheat flour. They were great and my kiddos loved them.

i just made these and my boyfriend who is a chef raved about the aroma and the taste, they are so moist and very easy to make, thanks for sharing.

Loved the topping on these! It’s a great topping that really is crunchy, and would be good on any type of muffin. I would have liked them a little more moist, but they have a nice flavor and really good topping. Did I say that already?!

These were not nearly as full of a pineapple flavor as I thought they would be. Followed the recipe exactly and figured I would cut the sugar down (per another reviewers idea) if they were too sweet. Unfortunately, even at the regular sugar amount they tasted kind of bland. However, they were easy to make which was great and they were very moist.

I’m a fan of muffins…and of pineapple so these hit the spot for us. My husband, who can be somewhat picky about his muffins (doesn’t like them to taste store bought) raved about them and said, “make these again!”

Perfect balance of flavor and I love that all you need are kitchen staples and a can of pineapple.
