Description

Super moist and delicious quick bread.

Ingredients

  • 3 cups All-purpose, Unbleached Flour
  • 2 cups Granulated Sugar
  • 1 teaspoon Table Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 3 whole Eggs
  • 1-¼ cup Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 1 can (8 Oz. Size) Crushed Pineapple
  • 2 cups Ripe Banana
  • 1 cup Toasted And Chopped Walnuts (optional)

Preparation

1. In a medium bowl, combine the flour, sugar, salt, baking soda and cinnamon; set aside. In a large bowl, beat the eggs, oil and vanilla until creamy; stir in pineapple and bananas. With a rubber spatula, fold in the dry ingredients just until moistened. Add walnuts, if using.

2. Pour into two greased 8-inch x 4-inch x 2-inch loaf pans.

3. Bake at 350ºF for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

The recipe should have been more clear on crushed pineapple. No need to drain. :)

I wondered the same thing when I was about to make this. I gambled and put the whole can of crushed pineapple in UNdrained. The recipe turned out just fine.

Hi Kay, this bread looks so yummy! I’m wondering if the pineapple needs to be drained, or should we add it undrained? Thanks for the great recipes as always.

I was expecting more pineapple flavor but it was still really good and well received by my family. Next time I may add even more pineapple and/or pineapple juice to give it more of that flavor. Even so, it was moist and delicious.

What a fun twist! I really liked the pineapple bits in the bread. I shared the second loaf with my coworkers and was asked for the recipe!

This is really good, although for my personal tastes, I like plain banana bread better.
Plan on using 5-6 bananas to get the 2 cups.

This was great! Only problem is I made the mistake of sending my fiancé to the store to get the groceries and instead of crushed pineapple, he bought chunks… not a good mistake. After reading the other review on this, maybe next time I won’t drain the pineapple, either… (also, I would LOVE to adapt this and use fresh pineapple someday!)

The recipe was very easy to follow and the pineapple provides some texture to the bread. I made mine without nuts and did not drain the pineapple. My family enjoyed this because the bread wasn’t overpowered with banana flavor.
