Description

Easy quick recipe for nights when you are in a hurry, but still want homemade corn bread.

Ingredients

  • 1 cup Flour
  • 1 cup Yellow Cornmeal
  • ¼ cups Sugar
  • 4 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • 2 whole Eggs
  • 1 cup Milk
  • ¼ cups Shortening

Preparation

Place all dry ingredients into a bowl, mix well. Add eggs, milk and shortening. Mix with electric mixer just until smooth. (Do not over beat.)

Pour into a greased 9x9x2 pan. Bake at 425 F for 20-25 minutes. Serves 9.

You can put it in a round pan like shown here, a 9 inch round one to be exact, or a cast iron skillet if you have one available.

Making this tonight! It is very easy to make and goes so well with my husband’s stew. This was so good! We used stoneground cornmeal and buttermilk instead of milk and it was so good!

This was so good! I am not a big corn bread fan but this will now be a go to recipe. I did substitute the sugar with honey and it was great!

Very easy, and very yummy! I made a half batch for two of us, and it was just right. Good as leftovers, too.
