Description

These taste just like a pecan pie only better! One of my favorites.

Ingredients

  • ⅔ cups Unsalted Butter, Softened
  • 1 cup Light Brown Sugar, Packed
  • 2 whole Eggs, Beaten
  • ½ cups Flour
  • 1 cup Pecans, Chopped

Preparation

Preheat oven to 350 F. Spray a 12-count muffin pan with non-stick cooking spray (I don’t recommend using baking liners for these).

In a medium bowl, cream butter and sugar. Add eggs and mix well. Add flour and stir until just combined. Stir in pecans.

Spoon batter into the muffin tin, with roughly 1/4 cup of batter in each. Bake for 22 minutes.

Really tasty! I used paper muffin cups and they didn’t stick to those. I added 1/2 tsp. of maple flavoring. They are very, very greasy though.

These are so easy to make and are simply the best! If you like pecan pie, you will love these muffins. I will make them again. They are my new favorites.
And I sprayed my muffin tins and had no problem with sticking. I let them cool first.

I am rating and reviewing these muffins on taste and texture which was terrific. We really loved them! Not too sweet and very simple to make. However… I felt I sprayed my muffin pan well with nonstick spray but these bad boys stuck like crazy! I tried to remove a couple while they were warm and had a fair amount of sticking. Decided to wait until cool and had major sticking. The recipe didn’t specify when to remove them from the pan, cool or warm. I will definitely make them again but will try to use lots of butter instead of spray and see if I get better results. Flavor really was great tho!
