Description

Delicious muffins that are healthy and a perfect start to your day!!

Ingredients

  • 1 cup All-purpose Flour
  • ¾ cups Quick Cooking Oats
  • ⅓ cups Brown Sugar
  • 1 Tablespoon Baking Powder
  • 1 cup Low Fat Milk
  • ½ cups Low Fat Peanut Butter
  • 1 whole Egg, Beaten
  • 2 Tablespoons Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • ½ cups Mashed Ripe Banana
  • ½ cups Chopped Fresh Strawberries, Plus More To Serve

Preparation

Preheat oven to 375ºF and grease 12 muffin cups or line with paper muffin liners.

Combine flour, oats, brown sugar, and baking powder. In another bowl, whisk together milk, peanut butter, banana, egg, oil, and vanilla. Once mixed, add in the chopped strawberries.

Add wet mixture to the dry mixture, stir well, but be careful not to over mix.

Pour mixture into muffin pans, filling cups about 3/4.

Bake for 22 minutes, or until a toothpick comes out dry. Serve with some fresh strawberries and enjoy!

Yummy! Made these this morning and the kids and I loved them … had to snag two for hubby who left before we got up today. They’ll be his afterwork snack. I did not have the strawberries though, but they were still good. Used natural (no sugar or salt) peanut butter. FANTASTIC and easy.
