Description

Here’s a delicious vegan and gluten-free muffin recipe. It contains four of my favorite things: chocolate, bananas, peanut butter and coconut milk!

These are my favorite muffins so far. What’s more, you need very few ingredients and just a little time to make them, and they taste amazing.

I didn’t use any additional sweetener because bananas are sweet enough for me, but if you want, you could add some.

Ingredients

  • 1-½ cup Gluten-free Flour (I Used Even Parts Rice Flour And Oat Flour)
  • 1 teaspoon Baking Powder
  • 4 Tablespoons Peanut Butter
  • ½ cups Coconut Milk
  • 1-½ whole Bananas
  • ¼ cups Chocolate Chips Or Chopped Chocolate
  • 3 Tablespoons Sweetener, Your Choice (optional)

Preparation

Preheat oven to 180°C (350°F).

Get a bowl and combine flour with baking powder.

Combine peanut butter with milk, because it’s easier to whisk the mixture this way. Add this mixture to the bowl with flour and baking powder.

Mash the banana and add it to the mixture. If you feel that the mixture is too dry, you can add some more milk. Add chopped chocolate or chocolate chips and mix one more time. Mix in sweetener if using.

Pour mixture into muffin cups and bake for 15–18 minutes. Check them with a toothpick. Let them cool and enjoy!
