Description

It’s Halloween and time to disguise a vegetable that doesn’t get invited to many parties. Parsnip muffins flavored with apples, nuts and dried fruit are welcomed whenever and wherever they are served.

Ingredients

  • 2 cups All-purpose Flour
  • ¾ cups Sugar
  • ¾ teaspoons Baking Soda
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 Tablespoon Dry Ginger
  • ½ teaspoons Ground Nutmeg
  • 2 whole Eggs
  • ¾ cups Vegetable Oil
  • ½ cups Milk
  • 1 teaspoon Vanilla
  • 2 cups Coarsely Grated Parsnips
  • 1 cup Coarsely Grated Apples
  • 1 cup Chopped Almonds
  • ½ cups Dries Peaches, Diced

Preparation

Preheat the oven to 350ºF/175ºC and place foil liners in 18 muffin cups.

1. Use a whisk to combine flour, sugar, baking soda, baking powder, salt, ginger and nutmeg in a medium mixing bowl. Set aside.

2. In a separate bowl, whisk together eggs, oil, milk and vanilla.

3. Combine egg mixture with flour mixture, stir until just blended.

4. Stir in parsnips, apples, almonds and peaches.

5. Fill muffin cups 2/3 full and bake in the preheated oven for 25 minutes until a toothpick inserted in the center comes out clean.

Notes: Almonds can be replaced by walnuts, pecans, hazelnuts or they can be omitted. Any dried fruit can be substituted for the peaches. I made medium sized muffins, if you make larger muffin, you may have to extend the baking time by five minutes and you will have fewer muffins.
