Nutrition-packed walnuts and naturally-sweet dates make this Paleo bread the perfect Paleo treat.
Preheat oven to 350°.
In a food processor, pulse together almond flour and coconut flour. Pulse in salt and baking soda until combined. Pulse in dates until mixture is the texture of coarse sand. Pulse in eggs and apple cider vinegar until combined. Very briefly pulse in walnuts.
Transfer batter to a mini loaf pan. Bake at 350°F for 28-32 minutes. Remove pan from oven and set it on a cooling rack. Cool bread in pan for 2 hours before removing. Serve!
