A Paleo/grain-free alternative to the regular banana bread.
Preheat the oven to 400ºF.
Start by whisking the eggs together in a large bowl. Next, add the agave, coconut milk, salt, and cinnamon to the beaten eggs. Beat until incorporated. Add the coconut oil and beat well.
Sift the coconut flour, baking soda and baking powder into the egg mixture. Beat together until well blended. Add the vanilla extract, mashed banana and chocolate chips to the mixture and mix well. Pour the batter into a standard sized loaf tin that is lined with parchment paper.
Bake at 400ºF for 30 minutes (or until a toothpick comes out clean). Cut into slices once cooled. And there you have it: a grain-free snack option for everyone.
