Description

Orange and strawberry breakfast muffins. No sugar added.

Ingredients

  • 125 grams Dried Dates
  • 1 cup Fresh Strawberries, Chopped
  • 1  Orange, Zest And Juice
  • ½ cups Butter
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Bicarbonate Of Soda
  • 1  Egg
  • 1 teaspoon Vanilla Essence
  • 1-½ cup Cake Flour
  • ½ cups Decicated Coconut

Preparation

Place chopped dates, strawberries and orange juice and zest in a mixing bowl.

Melt butter and stir in olive oil. Pour into date mixture,. Add bicarbonate of soda and stir.

Add egg and vanilla essence to date mixture, stir. Add flour and coconut and mix until combined.

Spoon into muffin pan and bake at 180°C (355ºF) for 30 minutes, until a tester comes out clean.
