Description

In honor of our beloved mascot Deuce.

Ingredients

  • FOR THE MUFFINS:
  • 1 whole Orange, Including Peel Sliced Into Quarters(remove Seeds)
  • ½ cups Orange Juice
  • 1 whole Egg
  • ½ cups Butter
  • 1-¾ cup Flour
  • ¾ cups Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • FOR THE GLAZE:
  • 1 cup Powdered Sugar
  • ¼ teaspoons Orange Zest
  • 2 Tablespoons Orange Juice, Freshly Squeezed

Preparation

Preheat oven to 400 F. Line a 12-count muffin pan with non-stick cooking spray or baking cups and set aside.

Put orange quarters in a food processor with orange juice and blend until pureed. Add egg and butter into the orange mixture and pulse until blended. Set aside.

Combine all of the remaining muffin ingredients in a mixing bowl. Mix orange mixture in with the dry ingredients. Fill muffin cups about 3/4 full. Bake for 18 minutes.

Whisk together the glaze ingredients until smooth. Spread on warm muffins. Serve warm!

These muffins are fantastic! So easy to do and always a hit with whomever is lucky enough to get one. Plus, I’m always into a recipe that gives me an excuse to use an orange from my trees.
