Description

These not overly sweet muffins are perfect with a hot cup of coffee or hot chocolate!

Ingredients

  • 1 cup Flour
  • ½ cups Brown Sugar
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ⅛ teaspoons Cardamom
  • 1 cup Oats
  • 1 cup Dates, Chopped
  • 6 Tablespoons Butter, Melted
  • 1 cup Milk
  • ½ teaspoons Vanilla Extract
  • 1 whole Egg

Preparation

Preheat the oven to 400 degrees and grease a muffin pan. In a medium bowl, whisk together the flour, sugar, baking powder, salt, spices, oats, and dates. In a smaller bowl, mix together the butter, milk, vanilla extract, and egg. Stir the dry ingredients into the wet ingredients and mix just until incorporated.

Spoon the batter into the muffin pan. Bake about 20 minutes, and then remove them to a wire rack to cool completely. Serve warm.

While the flavor was good, the texture was a bit off. Next time I’ll let the batter sit so the oats can soften before putting them into the muffin pan. There was an almost rubbery texture too, and I can’t figure out how that happened, but it’s quite possible it was my fault.

I’ll try them again sometime and see how it goes. Still, a great taste combination!
