Description

A chewy oatmeal muffin that tastes just like a cookie!

Ingredients

  • 1 cup Rolled Oats
  • 1 cup Milk (any Kind Should Work), Divided Use
  • 1 whole Egg
  • ⅓ cups Brown Sugar
  • 1-½ teaspoon Vanilla Extract
  • 1-½ teaspoon Vanilla Extract
  • ¼ cups Butter, At Room Temperature
  • ¼ cups Butter, At Room Temperature
  • 1 cup Whole Wheat Pastry Flour (or All-purpose)
  • 1 cup Whole Wheat Pastry Flour (or All-purpose)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • ¼ teaspoons Salt
  • ½ Tablespoons Cinnamon
  • ½ Tablespoons Cinnamon
  • ½ cups Chocolate Chips
  • ½ cups Chocolate Chips
  • Optional Garnish: Raw Turbinado Sugar

Preparation

Preheat oven to 350F.

Add oats to a bowl and add 1/2 cup of milk. Let soak for 5-10 minutes, while you prepare the first few steps of the muffins.

In a large bowl, combine egg and brown sugar and whisk until smooth and caramel in color. Add in vanilla and butter, whisking well. Try to smooth the batter as much as possible – there still may be some small butter chunks. Add flour, oat mixture, baking soda, salt and cinnamon and mix. Add remaining milk and combine until smooth. Fold in chocolate chips.

Line a muffin tin with paper liners and pour about 1/4 cup batter into each cup. Sprinkle the tops with raw turbinado sugar. Bake for 15-18 minutes, or until cooked through. Serve with butter!

I went to the blog to check all the measurements first. I didn’t have ww pastry flour – just regular ww flour, and they still turned out great. These aren’t a super-sweet muffin as you can tell from the ingredient list. But, we enjoyed them as an after school snack, and I feel better about giving my kids a healthier muffin option.

krystinaolsen – sorry the muffins weren’t what you had hoped! did you use regular whole wheat flour? the recipe calls for whole wheat pastry flour which is very much like all purpose and tends to yield the same result. using regular whole wheat flour would dry out the muffins and i wouldn’t recommend it.

jbarr287 – it is a teaspoon of baking soda! I have no idea what happened but I entered in almost all incorrect measurements for this recipe. I am so sorry and it is being taken care of now! :)

A Tablespoon of vanilla? I went to the blog in the end to get the correct measurements, it said 1 1/2 teaspoons vanilla.

Just to check, are the current measurements listed in the recipe above accurate? So excited to make these and want to make sure they come out perfectly!

I wasn’t a fan of this recipe. They were dry and slightly salty. I like the concept, but these weren’t a hit for my family.

I was a bit confused when I read the preparation instructions, since these didn’t follow conventional “muffin” method (wet ingredients incorporated into dry ingredients). So I made these according to the conventional method, and found that the batter was awfully runny…so I added a half cup of all-purpose flour to thicken it up, and that worked.

In the end, these turned out nicely. My super-picky boyfriend liked ‘em!

Love these muffins…I’ve now made them three times…once with dark choc chips which were yummy, once with blueberries which were also good and once with dried cranberries which made them perfect for breakfast! Very easy and very versatile!
