Description

A delicious twist on classic banana bread. Studded with chocolate chips and drizzled with chai tea, is it breakfast or dessert? I say both.

Ingredients

  • 1 cup Whole Wheat Pastry Flour
  • ¾ cups Rolled Oats
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Sea Salt
  • 1 teaspoon Cinnamon
  • 2 whole Eggs
  • ½ cups Brown Sugar
  • 4  Medium Bananas, Mashed
  • ⅓ cups Nonfat Vanilla Greek Yogurt
  • 1 Tablespoon Strongly Brewed Chai Tea
  • 1 teaspoon Vanilla
  • ¾ cups Chocolate Chips
  • FOR THE CHAI SPICED GLAZE:
  • 1 Tablespoon Strongly Brewed Chai Tea
  • 1 Tablespoon Nonfat Vanilla Greek Yogurt
  • 1 cup Powdered Sugar

Preparation

Preheat oven to 325ºF. Spray a 9×5 loaf pan with cooking spray.

In an medium bowl, combine flour, oats, baking powder, baking soda, salt, and cinnamon. Set aside.

In a mixing bowl, beat eggs with brown sugar until thick and pale, about 3 minutes. Add in bananas, yogurt, tea, and vanilla.

Fold dry ingredients into wet ingredients. Mix well, and add in chocolate chips.

Pour into prepared pan and bake for 1 hour or until toothpick inserted comes out clean. Let cool a few minutes, then invert onto a cooling rack to let cool completely.

Once loaf has cooled, make glaze. Combine tea, yogurt, and powdered sugar until desired consistency is reached. Pour over the top of loaf. Let stand minutes before cutting into, to let glaze harden.
