Description

These are the best bran muffins you will ever eat! Banana and chocolate, a match made in heaven. Partner with a glass of milk and you have breakfast on the run! Enjoy!

Ingredients

  • 1 cup Flour
  • 1 cup Rogers Natural Bran
  • ¼ cups Wheat Germ
  • ¼ cups Ground Flax
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 3 Tablespoons Cocoa Powder
  • ⅓ cups Semi-Sweet Chocolate Chips
  • ¼ cups Butter Or Margarine, Softened
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • ¼ cups Sour Milk Or Buttermilk
  • 3 whole Large Bananas, Mashed

Preparation

Measure the flour, bran, wheat germ, flax, baking powder, baking soda, salt, cocoa powder, and chocolate chips in a large mixing bowl. Stir to combine and make a well in the center. Cream butter, sugar, eggs and vanilla together until well blended. Mix in sour milk and mashed bananas. Pour all at once into the dry mixture. Mix only until moistened. Batter will be lumpy! Fill greased muffins pans 3/4 full. Bake in a 350-degree oven for about 20-25 minutes or until centre comes clean when poked with a toothpick. Let sit in muffin tins for about 10 minutes then remove onto a cooling rack. Enjoy!

Makes 12 muffins.
