Description

This is a super moist and delicious Banana Bread. It took me years to find this recipe and I will never make it any other way again. I’ve been using this recipe for 2 years now and it’s always awesome! Give it a try today.

Ingredients

  • 5 Tablespoons Unsalted Butter, Softened
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • 1 whole Egg
  • 2  Egg Whites
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Bananas, Mashed
  • 1-¾ cup Flour, All-purpose (I Use Unbleached)
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ⅓ cups Heavy Cream

Preparation

Preheat oven to 350ºF.

Cream together butter and both sugars until fluffy. Add egg, egg whites, and vanilla and mix until combined. Add the mashed bananas.

In a bowl mix the flour, baking soda, baking powder, and salt. Add to the mixture alternating with the heavy cream, starting and ending with the flour. Mix until completely incorporated after each addition. Don’t forget to scrape down the sides and around the bottom of the bow with a spatula, especially if using a stand mixer.

Spray a 9 x 5 glass dish with cooking spray and fill with batter. Bake for 1 hour to 1 hour and 15 minutes. This may also be put into 4 mini loaf pans but reduce the baking time to about 35-40 minutes.
