Description

These muffins are awesome on several different levels: they are delicious, easy to make, and they are loaded with healthy ingredients. They are great to freeze, so you can just pull out whatever you need at one time.

Ingredients

  • 2-½ cups All-purpose Flour
  • 1 cup Brown Sugar
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • ½ teaspoons Salt
  • 2 cups Shredded Carrots
  • 1 cup Grated Apple
  • ¾ cups Raisins
  • ½ cups Chopped Pecans
  • ¼ cups Shredded Coconut
  • 8 ounces, weight Canned Crushed Pineapple, Drained
  • ⅓ cups Vegetable Oil
  • ⅓ cups Apple Butter
  • 2 teaspoons Vanilla
  • 2  Eggs
  • 2  Egg Whites

Preparation

Combine flour, brown sugar, baking soda, cinnamon, and salt in the bowl of a stand mixer with the paddle attachment. Start mixing slowly and begin adding carrots, grated apple, raisins, pecans, coconut, and pineapple.

Add oil, apple butter, vanilla, and eggs. Stir just until everything is combined. This amount of batter should make 24 regular size muffins or 12 jumbo muffins.

Bake at 350ºF for 25–30 minutes. Start checking at 25 minutes by pressing gently on the top. You want it to be fairly firm, not squishy.
